Why is it so expensive?

Triple-cooking is a real restaurant technique: boiled, fried, frozen, fried again.
The glassy shell and fluffy middle are exactly what cheap oven chips can't do.
At £1.35 a portion the ‘luxury’ costs less than a bus fare.
